I say that you should definately try watching either Yu Yu Hakusho or Full Metal Alchemist. I'm telling you, the both of them will get you hooked, or in my opinion at least.

Naruto, Full Metal Alchemist, Cowboy Bebop, Trigun, Hunter X Hunter (definitly watch that one!), Mononoke Hime, Bleach and Nausicaa of the valley of the wind. Those are the absolute best of anime in my opinion!
