I am interested in teaching piano as a theraputic tool to individuals who are not able to read as well. This would involve learning more from "ear", but still applying some basic theory. Can anyone recommend a system/method that will accomplish this?

It's true that some children are more AURAL learners, while others are more VISUAL. You might check into Suzuki method or Harmony Road Music Course.
