Nutritional Composition of Goats Yoghurt

I need to know the composition of yoghurt made from goats milk of a known composition. The constituents I need are energy, fat, carbohydrate, protein, lactose and sodium. This is for new mandatory labelling standards in Australia. Neither Australian nor US government sites have info on yoghurt, though standard milk compositions are given. Or, does anyone know in a quantifiable biochemical sense just what changes one might expect when bactria convert milk to yoghurt? eg how much of the lactose is converted and into what?
