Cream of Crab Soup

Ingredients

1 LB Cleaned Crab Meat
1/4 Cup Butter or Margarine
1/3 Cup Flour
1 Cup Chicken Broth
1/2 Teaspoon Salt and Pepper to taste
2 1/2 Cups Whole Milk
2 1/2 Cups Half and Half

Process

Melt butter in pan, blend in flour and stir until smooth. If you do not cook slow, there will be a floury taste. Slowly stir in chicken broth, salt and pepper. Simmer for 2 minutes. Add milk and cream slowly. stir constantly until thickened.

DO NOT BOIL.

Add crabmeat to mixture.

Note: to double, use 2 quarts half and half and 2 cups of whole milk.
