Because the owl was already taken, as was the parrot, in earlier poems ofsimilar nature. The owl would have fit the use of the bust of Diana. Her bird was the owl and the symbolism of augury with the dead would have been complete. of course the owl answering every question with "Who?" would have driven the narrator to distraction much more quickly.

Poe also had noted ravens at his school in England. In his essay, "The Philosophy of Compositon" Poe gives a backward, perhaps disingenuous account of his process of choice. So the bird becomes a speaking but dumb emblem(symbol) of mournful and neverending remembrance. Try that at www.eapoe.org.

The raven was is the universal symbol of death. Death is often viewed in our world as black, and the raven was black too. He also liked to watch birds in the park across the street from his apartment with his wife. Now that his wife is dead, he relates the end-of-bird- watching to the raven, who is mean to the other birds. This unknown aerial beast represents evil in every way.
