Freezing Cut Up Potates

My Dad Wants To Know How He Can Freeze Cut Up Potatoes For French Fries and Hash Browns ,Without them turning Yellow.He Is 80 yrs old and lives alone and still does his own cooking.He wants to have small bags frozen for single use,he doesn,t like the store brands and also thinks he can save money by buying on sale and preparing them and freezing so he will have them ready to go with something else in a flash.We Have tryed this but they don,t turn out like store bought and they turn yellow.If anyone knows what we can do please e-mail me at krose3@prodigy.net Thanks Kathy

What about SURE-JELL,EVER-FRESH?Comes in a 6oz can,it says" fruit proctector,stops browning protects flavor".Talks about canning and freezing on the back.What we have comes in a powder.I have no idea if this is any help to you or not.We have never used it to freeze potates.Good-Luck

Kathy, did you partially cook them before freezing them. My mothers old freezer book(from 1963) says they should be partially cooked then frozen. I've never done it so I don't know about the yellowing but fruit fresh should take care of that problem.
