Blueberry (Peach or Cherry) Cobbler

Hi Karen..................since I frequently use recipes from your lovely forum and I was preparing to send this to my daughter, I thought I would share it.

Sift together.............

1 cup flour

1 1/2 tsp baking powder

1/4 tsp salt

bring to a boil stirring until sugar disolves and simmer 5 minutes......

1 package, or l pint (2cups) blueberries

1/3 Cup Sugar

1 tsp lemon juice

3/4 cup water

cream together.......................

1/4 cup butter

1/2 cup sugar

mix well.....................

1 egg slightly beaten

1/2 cup milk

1 1/2 tsp vanilla

Alternately mix flour mixture and egg mixture with butter and sugar. Pour hot blueberry mixture into greased 2 quart cassarole. Spoon crust on top.

Bake a 375 degrees for 30 minutes.

We always loved so much when the kids were young that we tripled the recipe and baked it in a great big bowl.
