Question about Pickled beets with eggs

Hey guys I am wondering if anyone knows if pickled beets with eggs in them have to be refridgerated. We left ours out on the counter in a big pickle size jar and they are developing a cloudy area at the bottom. They still taste perfect however so I am not sure about something being wrong. Lynn

that is normal...the vinegar keeps them. in pa they are kept out on the bar top in bar rooms.

They should be refrigerated! Yes I know some people leave them out but they also leave their turkey and all the trimmings out all day thanksgiving and have been lucky so far. Why take that chance? We only have one life. We are not cats. By the way, I am thrilled to hear the words pickled beets and eggs on this forum. Here in the Ozarks no one knows what red beet eggs are. My Husband is from Manchester PA. I love them!

I opened this post because I could not imagine anything less appetizing than pickled beets, especially with eggs!!!! Yuck!! It is amazing how one man's manna is another's horror! :-) Enjoy!

I refridgerate all my pickled eggs. I like pickling them with beets,onion slices and halved hotdogs.

The beets make a pretty purple / mauve colored egg. When you bite into it and see the bright yellow yolk, Dr. Seuss generally comes to mind (wonder why :>)

We always refrigerate our pickled eggs, but they don't last long around here. There are recipes for canned pickled eggs by the quart, its just the water bath canning method of course.

Oh Debbie, you don't know what you are missing. Pickled beets and eggs. Yum, yum. This is very Pennsylvania Dutch. There are also mustard eggs, a beautiful deep yellow color.

B. Lackie-I always pickle my eggs with the beets and juice. I add equal amounts of vinegar, sugar and water, a sliced onion and a few whole cloves. I don't like my eggs real sour so this recipe works well for me-not too sweet, not to sour.

home grown beets. or store bought beets will work. one cup apple cider vinagar 1/2 cup brown sugar 0ne cup water 4 to 6 whole cloves about an inch or two of cinnamon stick Bring to a boil. pour over beets. ( 4 cups sliced or two cans) This is my recipe for canning beets. Also ,I make up this recipe without extra beets to add extra liquid to a jar of my home canned pickled beets to make red beet eggs, boil and peel eggs then put them in a glass jar. A gallon pickle jar is what I use.Pour a batch of pickled beets on top. Add an extra batch of pickling juice if needed.Put in fridge at least two days to get the juice all the way through the whites. I gently shake the jar once in a while to turn the eggs. The ones next to the glass will not color evenly if you don't. You will have to stand guard at the fridge to keep spouse from sneeking them before they are ready.

Oohhhhhhhhhhhhhh pickled beet eggs! Ahhh.. coming from a Penn. Dutch family, these eggs are awesome! My mother always put hard boiled shell-off eggs in the pickled beet "juice" and let them sit in the fridge until they were a nice purple color. MMMMMMMMMMMMMMM gonna have to borrow some pickled beets from her and make some.
