Lots of compost and mulch, it won't change your pH. Organic material actually buffers pH so it won't change rapidly on you. I use wood ashes to add potash.

Worms and wormcastings with the leaf mulch.

Urea is almost all nitrogen.

Go with lots of compost. For nitrogen there are numerous organic sources. Rotted chicken manure, blood meal, and fish emulsion all do a good job. If you use wood ashes for potash don't use them fresh or you might throw your pH out of whack or even damage plants. Put them in that old leaky bucket that's laying around and filter water through them a couple or three times before adding to the garden.
