Rhubarb juice

Just finished re-reading Ruth Stout's book "How to Have a Green Thumb Without an Aching Back", and found something I'd passed over the first (and second!)times - she recommends cooking rhubarb and water with sugar to taste, straining it, and drinking the juice.

Had some rhubarb in the freezer and didn't want to throw it out (rhubarb will be up pretty soon again), and it's too much for just one person, and only my oldest son likes rhubarb pie, so I tried it - it was good! Sort of tasted like lemonade. Even my 6-year-old grandaughter liked it. So now, I'll freeze some more rhubarb, and not feel guilty when I don't get it made into pies right away.

Anyone got more ideas for rhubarb besides pies, quick bread, cobbler??

Mom cans rhubarb juice so we can drink it all year. I love the stuff! Warning: it can have a laxative effect on some people.

Last year at about this time there was a similiar post on the CS forum about what to do with all the rhubarb and someone suggested rhubarb wine. This started me out on an adventure in wine making. We opened a bottle of my rhubarb wine on Easter and it was DELICIOUS!! You might check for that post in the archives at CS, it was a fun experiment and I will try it again this spring/summer, by the way, I don't even drink wine.
