Too many variables (light, your lens, flash/no flash) for anybody here to give you an answer. The "portrait" setting on your dial should do fine.

Clarity isn't really a function of the aperture and shutter speed. Again, there are too many variables--lens quality, steadiness of the camera, focusing accuracy, type of film and developer, etc.

Experimenting is the best way to learn.

My advice is to learn little basics of photography. You can learn it yourself from books that are available in major stores like amazon and barnes & nobles. One good book is for beginning is "National geographic photography field guide" by Peter Burian.

Taking good people pictures is a combination of choice of lens, film, lighting, posing, background, composition, and most importantly facial expression especially the eyes.

If your criteria for a good portrait is "clear enough to see mole in the skin", the Canon REBEL 2000 has a "Portrait" setting for people just like you. If you want to use manual settings, simply memorize the aperture and shutter speed, then apply them manually, if that makes you feel better.

ofcourse, apperture does play an important part in making any picture sharp. but its just one factor. as others mentioned all the variables has to be of good quality. then any SLR is capable of capturing excellent photos.
