Here is my "healthy" pancake recipe, and they are very good!

3 cups all-purpose flour (I used unbleached) 3 teaspoons baking soda

4 1/2 teaspoons baking powder

1 1/2 teaspoons salt

2 cups whole wheat flour or oat flour (I used wheat)

1 cup 7 grain cereal (I didn't have this so I just used about 3/4 cup whole oats..)

1 cup cornmeal

4 tablespoons whaet germ

Mix until throughly blended, store in airtight container, if using whaet germ, keep in frig. I put mine in the freezer.

To use: Lightly beat one egg with 1/2 cup of yogurt, buttermilk, sour cream, or milk (Just one of these) Add 1/2 cup pancake mix.

This has been a favorite of ours for years and years. I originally came from a 1937 calendar, belonging to my grandfather-in-law.

WHOLE WHEAT CHILI l lb hamburger 1 large onion chopped 3 tbs oil 2 cups tomato puree (I use tomato home-canned puree---not as thick) salt pepper and chili powder to taste 2 cups cooked wheat berries

Brown hamburger and onion in oil. Add tomato puree, seasonings and wheat. Cook until slightly thickened.

To cook wheat: Soak overnight in water (1 cup wheat to 2 cups water) Cook (add 1/2 tsp salt to 1 cup wheat and 2 cups water) until tender----usually takes 3-4 hours. For chili, leave any water on the wheat. Add more water to taste. This serves 5 or 6, so adjust recipe as desired.

Actually, a person can just use their own chili recipe and replace the beans and any pasta, with cooked wheat.

This is a great summer soup, cause most of the ingredients are fresh from our garden.

Quinoa & Veggie Soup

1/2c raw quinoa

2T olive oil

2c chopped onions

1t salt

1c diced potatoes

1c chopped red or green bell peppers

1t each ground coriander, ground cumin, dried oregano, black pepper

3c water or vegetaable stock

1-1/2c chopped fresh or undrained canned tomatoes

1c diced zucchini or yellow squash

1T fresh lemon juice

Garnish: chopped scallions, chopped fresh cilantro, crumbled tortilla chips, and/or grated Cheddar or Monterey Jack cheese

Rinse quinoa in fine-mesh strainer under cold water. Set aside to drain.

Warm olive oil in non-reactive pot, add onions and salt, cover, cook on medium heat for 5 min, stir occasionally.

Add drained quinoa, potatoes, bell peppers, coriander, cumin, oregano, black pepper, stock, and tomatoes. Cover, bring to boil; then reduce heat, simmer gently for 10 min.

Add zucchini, cover, simmer for 15-20 min, or until all veggies are tender.

Stir in lemon juice. Serve with sprinkling of scalliions, cilantro, tortilla chips, and/or grated cheese.

Hi Melissa.

Quinoa is a really ancient grain, was found in the pyramids of Egypt as well as the Incan ruins. Also grown by Native Americans.

Has a nutty flavor and good crunch, and good nutrition (lots of vitamins, minerals, amino acids etc). Also used as a thickener in soups and stews, something like barley.

Breads, cereals too.
