Brownies

Help!! I need a good recipe for chewy, fudgy brownies. All the recipes I have or can find are for cake brownies. Having not always been frugal, I often bought store mixes that were chewy. Now that I am trying to make everything from scratch, I am having a hard time with this one!! My husband thinks I should buy the mix, but I refuse, knowing it is probably 12cents worth of ingredients, for $1.50!! Thanks in advance for all your help.

This is the brownie recipe I use from the Hershey's Cocoa Coookbook. They label it The "Best" Brownies. What could be better then?! Recipe: 1/2 cup vegetable oil or melted butter 1 Cup sugar 1 teaspoon vanilla 2 eggs 1/2 cup all-purpose flour 1/3 cup cocoa 1/4 teaspoon baking powder 1/4 teaspoon salt 1/2 cup chopped nuts (optional) Blend oil, sugar and vanilla in a mixing bowl. Add eggs; beat well with spoon. Combine flour, cocoa, baking powder and salt; gradually add to egg mixture until well blended. Stir in nuts. Spread in greased 9-inch pan. Bake at 350 degrees for 20-25 minutes or until brownie begins to pull away from edges of pan. Cool in pan. Frost if desires; cut into squares. 16 brownies

Nancy already beat me to the recipe. The guys here love them, and they can be made just as quickly as a mix from ingredients on hand. I buy the cocoa from an Amish bulk food store and it is less than half of what the cost is from a supermarket.

Vicki, What Amish food store do you go to? I am from the same area and we usually go to the Country Variety store in Belle Center. Is there another store I am missing? Maybe we have seen each other at the Amish store.

To make a really chewy, fudgy brownie, try leaving out an egg. Like if it calls for 2 eggs, just put one. If it calls for 3 eggs, put 2. I also use this in cake recipes, or in quick bread recipes as well. Since eggs act as a rising agent, leaving one out makes the product stay denser. Especially with cakes, they are dense and most rather than light and airy. I usually don't adjust the liquid, it is just thicker...

Joanie, No, we go to the Ashery Store in Holmes County when we are visiting some friends who live down there. But hey, now I can maybe check out the store in Belle Center if I get down that way.

These are soo good and soo chewing, we love them. ---2cups sugar, 1 1/2 cups flour, 1/3cup baking cocoa, 1 1/2 tsp salt, 1 tsp baking powder, 1cup veggie oil, 4 eggs, 2 tablespoons light corn syrup, 1 tsp vanilla and 1 cup chopped nuts if desired. Mix all together and put in a greased pan at 350 degrees for 25-27 minutes. I sprinkle confectioners sugar on top when done. enjoy.
