Speaking of Spam, any good recipes out there?

Here is one of mine:

SPAM FRIED RICE (or what to do with leftover rice)

If you're into cooking your SPAM, this one is for you. 4 cups leftover rice 1 1/2 cup SPAM, diced 1 egg 1 TBS. soy sauce 3 stalks green onion, chopped -- Fry SPAM in a small quantity of oil in skillet.

Lower heat and add rice. Mix egg and soy sauce and add to skillet. Stir everything around just like they do in Chinese restaurants. Just before serving add green onions.

This is terribly ordinary, but we sure like it. Fry onions and green peppers and mushrooms together, add the Spam and fry a bit. In the meantime cook maccaroni until tender. Mix all together with velveeta or similar type cheese and makes a wonderful cassarole.

I came up with a spam quiche-now, theres a clash of cultures! But it was very easy and well, it was one of those ransack the cabinet time, when you put together a wierd collection of stuff. Anyway, I had one of those pre-made frozen pie shells, and I chopped up the spam into little bits, and mixed up eggs-two or three and a bit of milk and a bit of onion, mixed it all together and poured it into the pie shell and baked til the eggs were set. This was in my college days, If I ate that now my arteries would scream.

When I was a kid, if my dad had to cook, he would fry Spam and make hot Spam and Mayonaise Sandwhiches-we thought they were fantastic. I don't believe I could eat one now though.....

The fried rice sounds good-we eat that a lot-though I've never made it with spam. I'll have to try it sometime.

Potato soup with spam chunks and onion, add grated cheese, mmmm good! Haven't made this in years, but used to be one of my kids favorite meals.

When I make a macaroni salad, I add some cubed Spam to it. As a child, I loved Spam anyway I could get it!
