Hi Everyone,Today's high was only 22, so it was a good day to bake. I defrosted some bananas and made banana cupcakes. There are probably a million different recipes for banana bread, but I always use a recipe that is in my Mennonite cookbook. So, here's my recipe for the cupcakes, please post yours so we can try it:
1/2 cup butter
1 cup sugar
2 eggs
1 1/2 cup flour
1/2 teas. salt
1/2 teas baking soda dissolved in 1 Tb. warm water
1 teas baking powder
1 cup mashed bananas
1 teas. vanilla
1/2 cup chopped walnuts (optional)
Cream shortening and sugars, add eggs and vanilla and beat until smooth. Sift dry ingredients and add to mixture alternately with bananas and soda/water. Fill greased or paper lined muffin pans 2/3 full. Bake at 375 for 20 minutes. Makes 18.

How did you freeze your bananas and not have them look and taste absolutely GRODDY????Would love to know cause I have banana plants here and the only way I've been able to preserve them is by drying - or cooking them up into a recipe and THEN freezing them.
