Recipes for great sandwiches/salads

Looking for some unique recipes to help slim me down and get my health back in order. I've just started eating better(no packaged food and mostly food that I know where it came from) and feel wonderful but one can only eat so many sandwiches with sprout,lettuce and turkey.Can someone help me, trying to cut my meat back to once a day(thats very hard for me,grew up eating a little vegetables with my meat!)Thanks so much!!

Hi Sandy! Can a guy answer a food thread! Lol How about fried tofu marinated in soy? how about tuna mixed with low fat mayo and pickles? I eat a lot of oatmeal with non-fat milk. Pretzels are great with sandwitches (no fat). I allow myself 3 steaks a year but only when I go out to dinner. Of course they make me sicker than a dog every time. Ha!....Okay I'm outa herre so the pros can give advice!!!..Kirk

Kirk never tried fried tofu. How do you prepare it?? I've made the ol'stand by...tuna with light mayo and soy mayo (love that stuff!) onions, pickles, lettuce, tomato, thin sliced cucumber and salt&pepper. Now thats very good!!! But this ol' girl needs variety or I'm scared I'll fall off my wagon!!!!hehehe

I just slice it as thin as I can and put them in a small non-stick pan with some soy sauce. I guess most people don't like tofu but I do. Works for me in a pot of beans too. I'd sure like to know how others cook the stuff but as far as I know I'm the only guy who likes it!!.....kirk

Why not soup? If you don't add oils and fats its very low fat and highly nutritious. Here is one that I used when dieting..suppose I should get to it again since everything is getting tight again! This is really yummy!! Fish Soup- 1 can tomatoes cut up (do not drain!!) 2 cups water 2 cups frozen mixed veggies 1 cup thinly sliced celery 3/4 cup chopped onion 1 1/2 tsp chicken bouillon powder or 2 envelopes or 2 cubes 1 tsp dried oregano 1 clove garlic, minced 8 ounces fresh or frozen fish fillets cut into 1 inch pieces. several dashes hot sauce.

In a large pot combine everything except the fish and bring it to a boil. Reduce heat and simmer 10 minutes, covered, until veggies are tender. Add the fish. return to boiling then reduce the haet, cover and simmer 5 more minutes until fish flakes with a fork. This makes 4 servings at 160 calories a serving (so I have 2!!)hee hee. Also, I used a chowder mix rather than just white fish. This is from the Better Homes And Gardens New Dieters Cookbook. The recipes were fantastic and I lost 20 pounds. When I stopped eating right I packed it back on though.

How about trying pitas instead of bread? That makes things a little different. I sometimes make black bean quickie to use as a filling. Smash a 15 oz. can of black beans,chop an avocado into bite size pieces (optional), combine those with 1/2 cup salsa, 1/2 of a chopped tomato, and salt and pepper to taste. Pretty tasty! We use it as a dip also sometimes.

How about english muffin pizzas? Spread with pizza sauce and top with a little cheese and the veggie toppings of your choice. Bake or broil in the oven until melted. Yummy!

I just thought of one more! Mushroom burgers! The recipe I have calls for cremini mushrooms but you could probably use other kinds also. 1 1/2 cups sliced mushrooms. Heat a little olive oil and saute the mushrooms with a clove of minced garlic until they are tender. If they get dry in the process add a little water. Then serve on a bun with burger toppings if you wish. This takes alot of mushrooms. 1 1/2 cups mushrooms yields one sandwich.

Hummus is great with warm pitas and makes a filling snack. Add some olives and tomatoes and thats lunch. Cheap too.

Tortillas with beans, diced veggies (steamed or not) and salsa. Heated or not. You can even make the tortillas.

Fruit salad. Baked potato with mushrooms and broccoli. Pasta tossed with dressing (as light as you like) and steamed cut carrots, broccoli, mushrooms.

Grated carrots are orange and appealing if you are used to seeing cheddar cheese and want to cut back.
