can i fit a dedicated flash to an EOS 500? which would anyone recomend?

Answers

Any Canon E, EZ or EX series Speedlite. Your 500 is not capable of Canon's newer E-TTL flash metering, so the EX series will have features you won't be able to use, but they will work fine.

Also any third party flash that is dedicated to the EOS system should work well with the EOS 500. There are lots of them and keep in mind that you usually get better quality an more features for more money.

be aware that EX-series flashes, while working, will only support regular TTL, not even A-TTL! For A-TTL you'll need an EZ-series line of flash.
