Need Good Cornbread Recipe

I can make a mean biscuit, but I make lousy cornbread. Can someone give a really great cornbread recipe? Thanks in advance.

If you don't want a sweet corn bread that tastes like cake try this: 1 3/4 cup corn meal, 1/4 cup flour, 1 cup milk, 3 tsp. baking powder, 1/4 cup oil, and one egg. Mix together. Have oven heated to 400 degrees and if you have them preheat oiled cast iron pans or skillet in the oven then put in mix and bake 20 to 25 minutes til brown. This makes a crunchy type corn meal that is delicious! I use the corn stick cast iron pans but a skillet works too.

In an old issure of Countryside there was one made with maple syrup, it is delicou. If I can find my recipe box in one of the unpacked boxes I'll post it.

One tip for great cornbread, heat required amount of oil for recipe in pan first, then dump oil into batter at appropriate time, mix, then pour into preheated pan.

My grandpa taught me to make cornbread. I use 1c. cornmeal, 1c. flour, 2 eggs, 2t.baking powder, 1/2t.baking soda, 1/3c.shortening (or bacon grease or lard) and buttermilk. Put the grease in an 9" iron skillet and set aside. In mixing bowl, mix dry ingredients. Stir in eggs and enough buttermilk to make it pourable.Now heat the skillet on top of the stove. When grease melts, pour most of it in the batter and mix well. Put the pan back on the burner and pour the batter in it. Cook for about a minute. The edges will start to bubble. Take it off the burner and put it in the oven at 450 for about half and hour. I test it with a toothpick. Double recipe for a 10" skillet. If you don't have a skillet, double the recipe and make it in a 9"x13" pan (heat that in the oven to melt the grease and forget about cooking it till the edges bubble-just bake)
