Homemade Corned Beef

Here's a recipe for those of you who love Corned Beef (like I do)

1 Beef brisket 4 to 6 LBS.

5 TBS Tender Quick

2 TBS brown sugar

1 TBS black pepper (ground)

1 tsp paprika

1 tsp ground bay leaves

1 tsp ground allspice

1/2 tsp garlic powder

Trim fat from brisket. Mix all ingredients together, rub into all sides of brisket. Place brisket in plastic bag, refrigerate. Let brisket cure for 5 days per inch of meat thickness. Cook as you usually do. I like to cover mine with water and cook on low for several hours. Best wishes!

i use basically the same recipe... except instead of tender quick, I use kitchen bouquet, and I also add a few grains of mustard seed..and a few red pepper flakes... tastes just like my irish grannies... yummy...
