Comfort foods, for cold rainy days

I think of comfort foods as those mom use to make, usually made from just things in the kitchen, One I use and I am sure you all remember porcupine meatballs,

1 pound ground beef, 1/2 cup uncllked long grain rice, 1/2 cup water, 1/4 cup chopped onion, 1/2 teas salt, 1/2 teas. dried basil leaves, 1/4 teas pepper, Heat oven to 375, Mix together all meatball ingredients, Form mixture into 12 meatballs, Place in 11 by 7 inch baking dish. IN med bowl mix 1 cup water, One 8 oz. can of tomato sauce, 1 tablespoon of worcestershire sauce. and pour over meat balls, cover and bake for 50 mins, or until rice is done.

And how about some gingerbread for desert.

1 3/4 cups of flour, 1/2 cup butter, 1/2 cup molasses, 1/2 cup butter milk, 1/3 cup brown sugar, 1 egg, 1 teas baking soda, 1 teas. pumpkin pie spice, 1 teas. grated lemon peel, 1/2 teas. salt,

Heat over to 350 In large mixer bowl, combine all gingerbread ingredients. Beat on low speed. until well mixed. Pour into greased and loured 9 inch round cake pan. Bake for 40 mins, or until top springs back when touched lightly in center.

Thanks for the gingerbread recipe. My daughter is studying the Rennaiance and has to do a presentation. She is going to make gingerbread and give a copy of the recipe, along with a copy of an old-time recipe to each person in the class. We will have to try yours! I just bought a big jar of mollasses in Amish Country too.

This is what my grandmother considered real comfort food.

Warning: This dessert is no were near low-calorie! ANY KIND OF FRUIT COBBLER

1 cup sugar

1 cup sifted flour

2 1/2 teaspoons baking powder

2/3 cup milk

1/2 cup butter melted in a 13 x 13 inch baking dish

3 or 4 cups of any kind of fruit.

Melt butter in dish while mixing all the other ingredients except fruit. Pour batter into hot dish, add fruit on top. Bake at 350 degrees for approx. 45 minutes.

This is the simpliest dessert and my grandmother used to make mine with cherries, my cousin's with apples and my brother's with strawberries. All delicious. Can be made with frozen fruit, fresh fruit or even canned pie filling. Peach is also extra delicious. To make it fancy, add whipped topping on each serving. It's even good cold!
