Turkey or Chicken Jerky??

Does anyone have any good turkey or chicken jerky recipes? I've been dying to try to whip up some of my own as of late but have only found recipes for beef and venisen. Could you use one of these recipes or does the consistency chance (especially with turkey)?

Betcha if you used ground turkey it would be very much the same as the beef jerky made with ground beef.

I have done it with ground turkey, and it was all right, but I prefer the beef. Any receipt for beef should work ok. The one concern I had working with the turkey was the bacteria factor. Funny that while the idea of ground beef bacteria doesn't bother me, it does with poultry. Just me, I suppose.

I made turkey jerky once w/ leftover cooked turkey using the same soy sauce/liquid smoke/red pepper concoction I use for beef. It tasted alright, but it was so tough it was almost inedible. I'd be afraid to make poultry jerky from raw meat. I did have ostrich jerky once- a friend at work brought it in- it was excellent. He processed it just like his beef jerky- at first I though he was BS-ing me that it was ostrich- it tasted so much like beef jerky.
