Honey Substitution

If I am substituting honey for sugar in baking recipes, what is the ratio? I want to try it some of my recipes but I know you don't do it 1 to 1. Thanks!

Melissa, I was told 1/2 cup of honey to 1 cup of sugar. That is what I do, but it not as sweet as normal..... Sorry, I can't be more help.

Sometimes you have to adjust the amounts of liquids when you use honey.

I had always heard what Marci said - 1/2 the amount of honey as sugar. However, I just got the book "Old Favorite Honey Recipes" and it says to use equal amounts of honey for sugar up to one cup. It also says to reduce the total amount of other liquids by 1/4 cup per cup of honey and to lower the baking temperature by 25 degrees to prevent overburning. Also do you know that when measuring honey if you measure your oil or shortening first then use the same cup, the honey will come out better? Also honey keeps baked things fresh longer. I have never tried the above ratios. Guess it is something you will just have to play with to get to your taste.

I have heard 1 to 1, but honey is sweeter than sugar. A book by an herbal nutritionist recommends 3/4 c. honey for every cup of sugar called for. Basically, just experiment and see what works for you and your family.
