Vegtable soup, Irene"s way

When I buy soup meat, I like the shanks or I cut up a small chuck roast. I just put this in a good size pot, as I use it for a couple of meals. I add two cans swanson beef broth, and water to cover. No salt at this time. I chop 3 or 4 celery stocks I like all my veg. cut small. I only use two carrots as I think carrots change the taste too much. I usually clean out the refrigerator of [ you know that one turnip, or one onion, or whatever. Stay away from to much cabbage as it is strong tasteing. I use one pint of my canned tomatoes. I skim any grease, and turn down to simmer on back of stove, usually cooks for 3 hrs. You can add salt now and pepper, If you get to salty, add more chopped potatoes. Okay now add some macaroni, I forgot I freeze corn in pint contaners in summer, And I add one of those. Now this is really good eating with some crunchy bread.

Hi Irene, I am making vegetable soup today. Also some oatmeal dinner rolls,and I have changed the respberry pie to cobbler instead. I put sugar cookie dough on it (Kadia like it this way)

Here is how I make my vegetable soup. All jars are quarts

One jar each venison, green beans, carrots, 2 jars whole tomatoes, about 2 cups shredded cabbage, about 2 cups of frozen corn, 1 large onion, about 10 medium potatoes, lots of spices like pepper, garlic, sage, oregano, parsley, and whatever else looks good. I don't add salt, just let them put it on when they eat it.

I first bring the meat with about 4 cups water, the onion, and the spices to a boil. Then I add the rest of the stuff and let it simmer until supper time. I am going to send a quart to my neighbor tonight too. This makes a lot of soup, I freeze the leftovers and might re- heat it adding a bit of barley or rice.
