User interface of M6 meter?

How exactly does the metering system in the M6 set the proper exposure? Does it set the apeture depending on the shutter speed you select?

I doesn't.

You play around with the aperture and shutter speed until the two red arrows glow uniformly or the center dot glows (in the TTL). There is no AE on the M6.

For the mechanics of light detection the M6 can be considered a "wide spot". Take off your lens, look at the white dot on the shutter curtain of a cocked shutter and that is the metering area coverage on the negative. Now envision that coverage on your various focal lengths. Wider coverage with wider angles, narrower coverage with telephotos. If you want a constant angle meter regardless of focal length then you can get an external reflected flash shoe meter which is quite excellent in its own way for street shooting applications too. Or carry a grey card and learn the Zone system.

PS: Did you get your M6's self-timer straightened out? How about film- loading -- have that down now too? Metering interface, yeah right...
