Hash brown casserole....

Hi Melissa, I saw you mention a hash brown casserole that you had at cracker barrel. I've never eaten there, but here's a recipe my sister gave me that is delicious and it might be close to what you had....

16 oz. frozen shredded hash browns- thawed

1 can potato soup -undiluted

1 8oz sour cream

1 cup shredded cheddar cheese

1/2 cup parmesean cheese

Comine ingredients and mix well. Put in baking dish and bake in 350 degree oven for 40-50 minutes. Enjoy!

Thanks Annie, I will give it a try. I wonder if I can shred my own potatoes and then proceed as the recipe calls for? That is what I will try to do!! I will let you all know how it works out...

Thanks Annie for that recipe. Crossroads restaurant in Versailles, In. serves that, and we love it. Theirs taste like it has garlic powder in it. Yum

I got a recipie sort of like that at Wal-Mart of all places-they had a rack of free recipies in thier produce section-I tinkered with it some-heres my version-cook 6-8 regular size peeled whole potatos (use that potato water for sourdough!) then run the potatoes through the slicer shredder on your food processer, then toss with sour cream-I only used about 8 oz, a little salt and garlic, and put in a casserole dish. Cover with shredded cheddar cheese, and bake til cheese is bubbly- about 20 min-half hour in 350 degree oven-I made it with meatloaf and put it in the last bit of time with the meatloaf. the casserole Annie is talking about is really good!!!! Its popular here as a pot luck dish. My altered Walmart dish is not quite so rich-less calories and a little cheaper. I guess its the plain everyday dish to Annies Company dish!

Melissa, there's a very easy hash brown recipe in Joy of Cooking that adds lemon juice, salt, pepper, and fresh parsley to the grated potatoes. I had it for dinner last night (it was a breakfast-for- dinner night). I'll have to keep going and try the casserole.

Hi Melissa, my sister has used fresh potatoes and they work great. In fact, they're probably even better. Cindy, next time I make them, I'm going to add some garlic to them. What a great idea, I never thought of it. Sonda, I'm not a vegetarian, but could probably be real easy. I eat very little of the meat when I fix it, unless it's mixed in with the dish, and I usually put more time and energy into the other dishes of the meal. I've never thought of it, but when I plan a meal, I think of what starch and veggie first and then the meat is usually and afterthought! I don't have a problem with eating meat, I just think it's really boring taste wise, compared to what a person can do with the veggies! Dave's always kidding me about my love for potatoes (I can't hardly make a meal without them). He's a rice lover!!!

Try this: 32 oz. frozen shedded hash brown potatoes 2 Tablespoons dried minced onion 1 cup parmesean cheese 1 cup sour cream (regular or lite) 1 can cream of potatoe soup 1 can cream of chickeny mushroom soup 1 8 oz. block sharp or extra sharp chedder cheese, shredded

Mix all ingredients and spread into a well-greased 9 x 13 casserole dish. Bake at 350 degrees for 40-50 minutes or until it bubbles in the middle when pierced with a sharp knife. Be careful! It's hot!
