Pizza Sauce

from The Rodale Cookbook - makes enough for four 10-inch pizzas:

1 cup onions, chopped

3 cloves garlic, minced

2 green peppers, diced

2 tablspns olive oil

2 tblspns other oil

4 cups tomatoes [canned]

1 small can tomato paste

1 tblspn oregano

1 tblspn basil

2 tspns honey

2 tspns salt [optional]

in a heavy-bottom pan, saute' onions, garlic, green pepper in mixed oils til tender. add tomatoes, tomato paste, herbs and seasonings and simmer over low heat for one-half hour or so til flavors are well blended.

about one cup per pizza

I like it simple-- I use a jar of my home canned tomatoes, thick and chopped up.

Start by sauteing a half onion, chopped and one diced garlic clove.

Add a pint of chopped tomatoes, t. basil

t. oregano'

1/4 cup tomato paste (bought by the gallon and frozen in 1/4 c scoops)

My family doesn't like it any other way, but I like it with a dash of salt, a tsp of sugar and a half tsp of crushed red pepper.
