Are you canning anything? I'm canning chicken broth today. We butchered a couple weeks ago and I froze bones,etc. I want to can 21 qts and 7 pts.

Next I'll can dry beans, mostly black, great northern, pinto and red. They are so convenient that way and Gary loves them.

I taught our neice to make jelly a couple weeks ago.

I haven't canned anything lately, but I may do some venison here in the next few days. I also might make some jam, I have some strawberries, and raspberries in the feezer that I need to use up.

Been having at it with lemons this week. Jelly, curd, thinking maybe trying a marmalade. Going to try to find some beans and carrots to get done for county fair in a few months, and whatever other jellies I can think up.

If fact, I'm canning chicken soup today! I've been thinking about trying some all fruit jelly from juice. Anyone done that??? - without sugar???

Barb, if you have any success with the all-fruit jelly and jam, let me know. Lance's granddad is diabetic, and I would love to make him some jelly just for him that doesn't interfere with his diet!

I was reading about doing it, and I think you still use the powdered pectin, just cook it a lot longer.

Smoking about l5 lbs of fresh-caught rainbow trout (lucky yesterday) and will can it next week.

I'm canning beef broth. A friend brought me a bag of bones all the way from her dads in Ohio. I roasted them first and then pressured the stuffins out of them. The broth is very rich so I think to can it in pints. My nephew brought me 2 doz. ducks and a big goose. We cleaned them and I need to vacumn seal them for the freezer. Last summer I canned enough grape juice to make 3 recipes of jelly. Who knows when that will get done. I never run out of things to can. Blessings Peggy
