How long do pickled eggs which have been preserved without waterbath, or pressure canning, last?

Around our house not too long. They get eaten quickly.

I've had them in the fridge for up to a month, that's as long as possible before they got eaten up so far. If they are in a actual pickling strength solution of brine, they should last for several months, check the Ball Blue Book for pickling brine recipes if you don't know about the pickling strenth of your brine.

I used a recipe I found online because I didn't want to do them in the beet juice, which is the only recipe I'd seen.

Approximately - forever. If you refrigerate them, as I do, the vinegar (read acid) bath is not at all subject to spoilage. I generally make several quarts (about a dozen or so) at a time, and they still seem fine as much as a year later. They still taste good, and so far, I am still alive! GL!

Well, I never refrigerated mine once I poured the boiling vinegar over the eggs. The acidity is high enough to keep spoilage organisms from growing and it soon penetrates the egg pretty well. I usually let mine sit for thirty days or thereabouts before opening the jar for eating. Don't think I've had a jar last longer than a couple of weeks after that before they were all eaten.

Can Botulism be a concern?

Pickling usually takes care of that, but it wouldn't hurt to water bath for 10 minutes just to make sure.

I just checked my book - make that 20 minutes.
