Since Mark mentioned chicken, and someone was also talking about chicken salad. I thought we could post some different recipes. I like to have some of these sanwhich fixings for our Christmas Eve buffet.I use chopped up chicken, I don't grind it, just coarsely chop. Then I cut up apples, grapes, celery, onions,and sometimes mandarin oranges. I add some spices like pepper and garlic. Some mayo and some spicy mustard. This is good and fruity, You can stretch a little chicken a long way with this method!

I used to chop, now I grind the meat and onions so it's almost like pate. Use dark meat. Add a couple hard boiled eggs. Then I CHOP the celery so you get that crunch. Add some salad dressing and curry to taste. Also, if wanted: grapes, craisans, grapes, almonds).Yum!

My fave is chopped chicken, walnuts, sliced purple grapes, mandron oranges, onions, a little Mayo, salt and pepper, Serve on a homemade crasaunt and you have a wonderful ,light and health sandwhich.
