Using Chicken Leg & Thigh Quaters.

Although I buy and sell a lot of Roosters I seldom slaughter any for myself I usally go to the grocery store to get my chicken.

This past weekend I bought a 40 pound box of leg and thigh quaters for .34 cents a pound $13.60 for the whole box. I cut the drumsticks from 12 quaters and placed 2 drumsticks in each of 6 freezer bags. The rest of the quaters I smoked after seasoning with lots of spices. After they were cooked I removed all the meat from the bones and placed about 1 pound of meat in freezer bags. I then took all the bones and skins and placed them in a 2 large pots with a few quatered onions, carrots and celery. I then filled the pots with water and simmered for a few hours. After simmering I strained all the broth and placed the pots in the refridge over night. After siting in the fridge overnight all (well most) the fat came to the top and solidified, I scooped the fat off and discarded it. I then heated the broth up a little and placed the broth in Ice cube trays and small paper cups and frooze. After freezing I will place all the cubes in large freezer bags.

I now have 26 bags of frozen cooked chicken meat to use in different recipes. I will also have a bunch of ready to use frozen broth cubes.

Does anyone else buy these bargin leg & thigh quaters? How much are they in your area? What do you do with them?

Me! I've always liked both light and dark meat, but since I heard that a caterer I admire always uses dark meat in her chicken salad I am convinced that yes, it is tastier. I do believe they contain more fat than the breast meat though. Of course using the broth in place of oil when cooking will be tasty and nutritious. I believe i have gotten these for .39 per lb when bought in huge bags here.

I also like to use them for cooking in various recipes. But if I am just eating it plain, I like white meat. I like to make BBQ chicken legs! sounds like you are super-organized and thrifty Mark. I see these bags for about 39 cents a pound at Krogers and Aldi's.

I like to think of myself as being thrifty but some of my family and friends say I am just plain CHEAP!

I have always perfered the Dark Chicken Meat over the White.

We can usually get them for about .39 a pound here south of Kansas City. Since I feed my dog the BARF diet, what I like to do is just cut off a good portion of the meat for my family, then feed the bones, skin, and small portion of meat to the dog. It works out great! We use the meat in stir-fry, BBQ, soup, and my hubby's favorite, chicken fried rice.

We'll be buying more soon, it looks like. We're running out of our own homegrown frozen chickens, and our hens are laying way to well to use any of them! Back to the grocery store! :-)

I buy chicken leg/thigh parts in 10 lb. bags and seperate them into 2 person meals for my husband and myself. I buy the bags for 19 cents a lb.
