Looking for a certain cookie recipe

greenspun.com : LUSENET : Beyond the Sidewalks : One Thread

Several years back, I worked making wreaths and etc... at a nearby Christmas Tree Farm; and the owners wife used to make these cookies. I know she used a yellow cake mix, and they had coconut and nuts in them but I don't remember what else. I was wondering if anyone had a recipe for a cookie like this; or knew a site where I could look for one. Getting ready to start my holiday baking!

Diane, I found a recipe on kitchenlink.com a day or so ago; but I wanted to wait to post it until I tried it out to see if it was the same one. I'm not sure if it is, but they taste pretty good anyway!

1 box (18.25 oz) yellow cake mix

1/2 cup oil

2 eggs

1 cup coconut

1/2 cup nuts

Mix well, dough will appear oily. Bake at 350* for 10 to 12 minutes, or until golden. These do spread out so space like for chocolate chippers.

I think I may try to cut the oil back to 1/3 of a cup, and maybe add in 1/2 cup of well drained crushed pineapple in the next batch. What do you think about crushed candy canes in chocolate cookies?!
