For whatever reason I forgot about this easy recipe until last night. It's one of Gary's favorites.
Melt butter in skillet...add lots of thinly sliced onions and a can/jar of drained potatoes...a little salt...cook a few minutes...Enjoy! You can cook a couple eggs in the same skillet at the same time.

Thanks Cindy: Im planning to make this this evening but with sliced kielbasa. Potatoes, pears and corn from our freezer full of harvest! Yum! Do you make this for breakfast too?

I love leftovers for breakfast, esp. potato leftovers. I haven't cooked this particular recipe for breakfast, but if Gary didn't have to rush off t work I could have easily. Boiled diced red potatoes are really good fried with onions and parsley.
