For whatever reason I forgot about this easy recipe until last night. It's one of Gary's favorites.Melt butter in skillet...add lots of thinly sliced onions and a can/jar of drained potatoes...a little salt...cook a few minutes...Enjoy! You can cook a couple eggs in the same skillet at the same time.

Thanks Cindy: Im planning to make this this evening but with sliced kielbasa. Potatoes, pears and corn from our freezer full of harvest! Yum! Do you make this for breakfast too?

We love fried potatoes,onions and corned beef! I fixed this the other day. I always have to fix enough for breakfast the next morning.When we eat it for breakfast I fix a nice gravy to go over!Delious.Too bad we have already eaten breakfast, but then again that was 2 1/2 hours ago!!Smile God Loves You!

I love leftovers for breakfast, esp. potato leftovers. I haven't cooked this particular recipe for breakfast, but if Gary didn't have to rush off t work I could have easily. Boiled diced red potatoes are really good fried with onions and parsley.
