Six Week Bran Muffins?

greenspun.com : LUSENET : Country Families : One Thread

Does anyone know how to substitute natural bran for the bran flakes in the six week bran muffin recipe? I don't want to purchase bran flakes as I purchase organic natural bran.

Any help would be appreciated.

Thanks.

Hey Silvia, I love those muffins. And they don't last 6 weeks. At least not around here. lol If you are talking about the bran that is more dense than the raisin bran cereal, then I would think you would have to cut the amount of bran required and add more flour. Just because bran is usally heavier. Just a thought. But, you might just add more leavening agent. I guess it all depends upon how fluffy you like your muffins. I've had some that were so dense that one would make a breakfast alone. Hmmmmmmmm, now I think I might try that too. Might just surprise my hubby with some muffins this weekend.

What are six week bran muffins? Can you please post the recipe? Thanks!

Refrigerator Bran Muffins

2 cups boiling water 2 cups Nabisco Bran 100% Soak the above and cool

1 heaping cup Crisco 3 cups white sugar 1/2 tsp. salt 4 eggs beaten 1 quart buttermilk 5 cups flour 4 cups Kelloggs's All Bran 5 tsp soda

Mix well and put in covered Tupperware type bowl. When ready to use fill muffin tin 1/2 full. Bake 15 mins. at 400. If you'd like a nicer crown on them fill muffin tins and let sit at room temp. 20 mins. or so.

Will keep in refrigerator 6 weeks.

My mix was always gone before the 6 weeks were up but the recipe says it'll stay good that long. They are really good and filling.
