corn syrup?

Just wondering if anyone knows how to make corn syrup?

The encyclopedia says it is made from cornstarch and water. With enzymes added and cooked under pressure. The result is corn syrup consisting mostly of glucose and maltose plus dextrin.

I'm afraid the manufacture of corn syrup is an industrial process not suited for home use. I'm aware of two different processes that have been used - the enzyme reaction is the one I think is currently being used and there's an older process that treats corn starch with sulfuric acid.

This isn't an answer, but I'm interested in the question because I expect to be working on a small sus.dev. project soon in Central America and wonder about using readily available corn to produce a sweetener to replace not-so-readily-available sugar (since I'll be in the highlands. Surely there must be a way to do it in the kitchen, not only in a factory.
