What is the significance of the assymetrical horizontal striping on the sleeves of the NYY uniforms?

If you mean the black armband effect, that's as a mark of honour for the death of Joe Di Maggio.

Pinstripes on the Yankees uniforms were first introduced in 1923 (for more on this, see History: Transition and Change). The stripes on the sleeves only appear not to be parallel. This is because of the shape of the sleeve which is slightly wider at the shoulder than at the cuff.
