Film Speeds

What are the appropriate circumstances to use 400 and 800 speed film? What speed would you use for an important event (wedding) that takes place indoors (a church) with natural lights, low lights, and high lights?

This is a general film question and isn't really appropriate for a Canon EOS equipment forum. But anyway, have you had a look at the photo.net learning sections on film?

For a wedding I'd probably use Fuji NPH (400) or NPZ/NHG II (800) if I weren't using flash. With a fast lens. Generally speaking, the faster (higher ISO number) the film, the worse the grain, though this does depend on a lot of other factors as well.
