Sweet taters in the freezer?

Can I bake sweet potatoes and then freeze them in freezer bags? How can I store fresh ones that I haven't froze(provided I can freeze some)? Thanks a bunch, Jennifer

Hi, I freeze sweet potatoes. Bake them. Peel the potatoes and slice into freezer containers or bags. Works great.

The best way I've found is to cook them first and freeze. My recipe is as follows --

Peel sweet potatoes and cut into 1/2" x 1" x 1" cubes (or as close as you can get). Fry up a chopped onion in butter or olive oil in a cast iron frying pan until golden. Add sweet potatoes and stir to coat. Add about 3/4 cup of chicken stock, some fresh ground black pepper and a bit of salt. Simmer, covered, in the pan until most of the liquid is gone.

This makes a wonderful vegetable side dish, freezes well and re-warms to just a little thicker consistency then when served fresh. The flavor is wonderful.

Great to hear info on this topic. I have been cooking them until tender, adding some powdered milk, butter, brown sugar, and orange juice concentrate. Tastes great. I then put them in quart freezer bags and am hoping they come out of the freezer this winter as good as when I put them in?

I never wondered that until now. I buy organic and it goes bad pretty quickly. My favorite way to cook them is to slice them thin and bake in the oven in olive oil, turning once until crispy. Yum, yum.

Speaking of sweet potatoes.....Does anyone out there have a good recipe for sweet potato pie? I haven't had this in ages and this thread just reminded me of it. :o)

Ever tried Sweet Potato Chips? Make them just like regular potato chips...they are good. As for keeping sweet potatos in the freezer, try baking them till soft, scoop out the inside, mash and add milk, butter and a little brown sugar and then restuff the potatoes, put them in plastic sandwich bags and freeze. This is making me hungry! Harmony
