Hope someone can help with this. How long will cakes in a jar last? I have had people tell me they were only good for 2-3 day and them I have had other's tell me 6 months which is right? I am wanting to put these in my Christmas gift baskets but I need to be able to let people know how long they are good for. God Bless. Thanks Tracy

My daughter an I did these about 2 Christmas's ago. Carrot cake recipes worked by far the best. Always use wide mouth jars, and the tall narrow jars worked the best, since they were the eaisest to get the cakes out of. Date and Nut bread recipes also worked, what didn't work was anything with fruit, apple or bannana pieces, mushed/sogged the cake around the fruit and the fruit turned brown. I made a lemon curd, nothing really but lemon meringue pie filling, canned in the little half pint quilted jars, to use as iceing. They were very popular. Last Christmas we found a jar in the Christmas boxes in the attic. It was still moist and wonderful, an the lemon curd obviously would last a long time also, if you can keep folks from eating it that long!

You simply put he cleaned and greased jars on a cookie sheet, fill about 1/2 full with mix, bake as usual and just as soon as they are done, and make sure they are done with a toothpick inserted, pop a boiled seal and jar lid on them. Always boil your seals to soften the rubber. It works great! Good luck with this! Vicki
