I saw recently a plan for building a pallet root cellar. Does anyone have any idea if this is practical? I would be worried the whole thing would come crashing down on my head?

We have a pallat lawn mower shed with a tin roof. Still standing after terrrific wind storm. Cellar. Hmmmm Maybe not. :-)
