temp. for scalding geese

Have misplaced my chart. Can anyone please tell me the correct temp. of the water to scald geese? Appreciate any help I can get. thanks. tomas in b.c.

Tomas, between 130 and 150 F will do it. Don't get it too hot or keep them in too long (no more than 3 minutes, probably) or you will cook the skin. A little detergent will get the water through the feathers easier, as well.

Skinning geese prevents burnt fingers (I always burn myself trying to actually get them wet when scalding, even with soap), and also takes most of the fat away, leaving a very lean meat.
