Since peas are on our mind (and table) right now, here's a recipe we're trying for instant pea pod wine. It's an English favorite:Wash and drain 4 1/2 lbs young pea pods, boil in 1 gal water with a campden tablet (if you use them). Strain the juice into a fermentation jar, discarding the pulp. Add 2 lbs sugar. When cooled to body temp, add juice of 1 lemon, 1/2 tsp tannin (or some old tea) and wine yeast. Loosely seal with an airlock and keep in a warm place for 2-3 weeks. Rack it into a clean jar, add a Campden tablet, allow to stand another week, then filter and bottle. This wine does not keep well, so consume within a few weeks.

Oh how great!! When we used to watch Good Neighbors on PBS they were always talking about pea pod wine they had made...I thought it was just a joke!! Now I'm gonna have to save the pea pods and try it out.

What is campden?

Campden tablets are a sulphite salt. It's a sterilising agent used in winemaking. We never bother with it, since we've never had problems wth wine going bad. It's also what gives some people bad headaches from commercial red wine.
