'Nother Eggplant Question

We now have eggplant in the garden. A friend gave us some fresh last year, we liked it-we planted it. When this stuff starts bearing, what is the best method of preservation? Freezing? Canning? Drying? Don't Bother? Any help would be appreciated.

I've frozen most of mine (slices and cubes). I also make eggplant parmesan (don't add the cheese till you cook to eat) and freeze that. It can also be pickled. Have never tried it other than in these ways... Don't often have enough left after eating to experiment with!!

Well I'm glad Sue knew! I haven't had any left over to preserve. I thought I would dehydrate it if it came down to it, but I have never purchased any prepared eggplant, so I really didn't know. Good luck, Steven!
