"Electronic Optical System"? Or something very close to that.

EOS = Electro Optical System.

When EOS was introduced in 1987, the idea of electrical communication-- rather than mechanical linkage--between lens and body was cutting edge technology, but this superior technology came with a price: it orphaned the Canon FD system. Other manufacturers, e.g., Nikon, pursued a hybrid mechanical-electrical linkage and maintain a limited amount of compatibility with lens and bodies of the past.
