Violet Jelly: 2c. violet petals, check for bugs, rinse...Cover wtih boiling water, set for 24 hours-infusion will be ugly and smelly...strain...2c. infusion...1 box pectin...juice of one lemon...4c sugar... Put pectin, juice and infusion in large pan...bring to boil.. add sugar...Boil 1 min...jar...seal. Enjoy1 It's beautiful and mild. I do 3-4 batches of petals at a time.

Dandylion jelly then sassafrass too. God Bless

Thanks, Cindy! Do you have any recipes for anything to do with mesquite flowers? Or is this a kind of all around approach for flower jellies?

I don't know anything about mesquite flowers, never heard of them. I'll check out some recipes later. Most of these flower jelly recipes have different about of sugar to infusion ratio.
