I presume that the answer you are looking for is Poe's essay 'The Philosophy of Composition' where he describes the way he allegedly wrote 'The Raven'. However, it is important to note that the essay almost certainly tells us more about Poe's theory of writing poetry than precisely the way he actually did write.

Otherwise, there are many important pieces of criticism by Poe which describe how poetry ought to be written, and in particular I would recommend the 'Drake-Halleck Review'.
