Meat smoking recipes Have any??

My step son is in to smoking/curing meat he just got finished smoking smelt( a fish) and smoked a goose breast. He would like to know your recipes he would particularly like a recipe for clams and oysters but would probably try anything. thanks

smoked smelt?? never heard of that,, I smoke salmon everyyear, make a brine of lemon juice and garlic ( I like it ), let it soak for a few hours (depends on how hungrary you are), smoke, low heat, lotta smoke,, I use corn cobs and apple wood

My husband makes smoked duck using cherry chips. It is outstanding! The recipe is in the Luhr Jensen Little Smoker book, or whatever it's called. Alder is my favorite for smoked salmon, and as I recall, hickory is good with pork.

It may sound simple but it is good. I smoke a lot of turkey and i always use a lot of hickory chips on the fire and a lot of salt on the bird, inside and out. Don't go sparingly with the salt, that's what keeps it moist.
