Bubble and squeak recipe

I am looking for a recipe i tried once.I got it from one of these magazines and cant find it in all my back issues. It is called bubble and squeak, and if a recipe with potatoes and cabbage that you cook on the stove in a frying pan. Thanks

Bubble and Squeak: a# all purpose potatoes...1/2 small green cabbage...2T milk, warmed...1T butter...1t. Wrocestershire Sauce...1t. coarse-grained prepared mustard (opt.)...3/4t salt...1/8t black pepper...1 large egg, lightly beaten...1T chopped chives...1/4c. unsifted all purpose flour...2T vegetable shortening or bacon fat...

1. In 3-qt saucepan, heat 3 inches of water to boiling. Peel potatoes and cut into 1-inch pieces. Add to boiling water and cook til tender-about 20 min. Remove to colander with slotted spoon. Save water.

2.Thinly slice cabbage. Reheat water in saucepan to boiling. Add cabbage and cook 5 min. Drain very well; coarse chop cabbage.

3.In large bowl, with electric mixer, beat potatoes til well broken up. Add warm milk, butter Worcestershire sauce, mustarrd, salt and pepper. Beat til smooth and fluffy. Stir in drained cabbage, egg and chives.

4. On sheet of waxed paper, divide mixture into 8 cakes, about 1/2 in thick. Sprinkle cakes on both sides with flour. In large skilled, heat 1T shortening over medium heat, Fry cakes, several at a time, til golden on both sides-5-6 min in all. Add remaining shortening as needed. Serve immediately.

Bubble and Squeak is a classic English dish. You make it the day after a big roast dinner. It should be made with left over roast potatoes and brussel sprouts (not cabbage- perish the thought). We always have it the day after christmas (boxing day!!!). We chop up and crush our left over roasties and brussel sprouts and fry in hot lard (or vegetable oil if you prefer). If you don't know, roast potatoes are potatoes which have been boiled and then are baked in hot oil, turned until golden on all sides. I sometimes wonder why all of england hasn't died of heart disease!!! If you have any other questions just email. I admit, even my kids love eating brussel sprouts for breakfast this way! Kim

You read my mind! I was just saying to my Mum last week, I don't know one person in England who's had a heart by-pass. Over here just about every man you come across over the age of about 55 has had at least one!

I grew on "bubble and squeak" too and "Scotch Scallops" Sliced potatoes dipped in batter and deep fried served with sliced canned corned beef also dipped in batter and deep fried!!!! My husband would have a fit if I served that stuff here. But oh how I miss it!!

Hi Pauline,

I married a Brit and was a vegetarian from Ca. when we met! We eventually lived 3 years in England. Wow did I learn a lot! I guess my take on health (and just about everything else) is that people in England just aren't as excessive as Americans are. We live in the Ozarks now and raise (would you believe!) pigs, chickens and sheep. Truth is we had bubble and squeak for breakfast today. Talking about it made me splurge and buy some brussel sprouts (which we've never had luck growing here) to go with our roast pork and potato dinner.

Where in England are you from? We lived in Plymouth but David is from Norfolk. Kim

oh! pauline you really have become an american.!!! you have forgotten what scotch scallops are.!! sliced potatoes, onions, covered with water salt and pepper, slices of bacon on top and cooked in a fry pan untill tender. stick under the grill to crisp the bacon then remove the bacon and brown the potatoes under the grill. deliciuos with cabbage or carrots. Hi everybody. Wow!can't believe my mother stopped lurking and and put her two cents in ! Looks like I really have forgotten a few things since coming over here.

Dale, I'm so glad that bubble and squeak is something you're allowed to eat, it's so good.

Hi Kim, your place sounds great. We hope to raise our own beef and pork after my husband retires and we have more land. We just have 2 acres here in NC and raise Nubian dairy goats and a few chickens and rabbits. The rabbits were supposed to be for meat but neither of us could do the bonking on the head. Now they're all a bit long in the tooth and living in luxury as pets. Some homesteaders we are!

I'm from a little village called Coppull, just north of Wigan in Lancashire. That's were "Millie" my Mum is. She's a great Mum!
