Another wintry day - What's for dinner at your house?

greenspun.com : LUSENET : Countryside : One Thread

After being sick for several weeks, I finally feel like cooking. I have a big pan of meatless lasagna in the oven, and split pea soup simmering on the stove. I'm going to make a pan of scalloped potatoes, and an apple cake. I cooked a pot of brown rice, and marinated some tofu (my favorite!). I'm going to cook up a big butternut squash, and I should be set to eat like a queen for the next week. What are you all doing in your kitchen today?

A big pot of chicken corn chowder and my husbands oatmeal bread. Maybe a chocolate bomb if I get to it today. This chowder is becoming my favorite meal.

My goodness, Cathy - when you feel like cooking, you really cook! We had homemade sloppy joes, chips, peas and homemade applesauce. Tonight is beef/lentil tacos with toppings, and fideos. It's been in the 30's here in N IL, and gloriously sunny. Eternally windy.

We usually don't have dessert on the weekdays, but we are celebrating with our Daughter Jessi. She recieved 2 firsts and a second on her solo. She has the voice of and angel.

Jean, I try to cook a lot on my day off. I live alone, and work a minimum of 60 hours a week, so this allows me to eat fairly healthy meals. It's so easy to eat junk when I'm over-tired; this way I "heat and eat". I was very greatful to have a lot of serving-size meals in the freezer while I was ill.

Well, after nothing but snow and rain, we've been given a few really nice and MUCH warmer days. We plan on doing a cookout in our campfire ring in the yard! I thought that would be fun and a good way for the family to spend some time together since dh has been working long, long hours and will be leaving for a few days tomorrow! So it's going to be hot dogs, potato salad, and then s'mores!

Tonight is pot roast with all the veggies. Dessert is triple chocolate mess that is cooked in a crock pot.( see the crock pot thread that's been started for the recipe.) Robin

It's still snowing on and off here, with about eight inches on the ground. A big pot of pinto beans with onion and shredded cheese sounded good this morning. Of course we'll have some good ole corn bread to go along with it.

What am I doing in my kitchen today? Well, after cleaning it, a quick dinner of bowtie pasta with garlic/egg/cheese sauce, with peas and pepperoni mixed in, and a salad on the side. Luckily, no one in the house needs to go out in polite society - ooops, strike that, hubby has a Cub Scout leaders meeting! Gee, hope they don't mind the smell of garlic!

Wow Cathy, you have lots more ambition than I would if I'd been sick for a couple of weeks!!! I've had my 3 1/2 yr. old granddaughter here all day (we made homemade doughnuts) and all I can manage is some leftover beef stew and/or chicken soup! But I'd sure like to know what "chocolate dream" is, Terri. Sounds like something I could live on!!!

What did I have for suppe last night, garlice pop corn and raisin bran with soy milk. What I had planned on having was seared portabella mushroom sandwiches, hot kidney bean salad, onion rings and baked potatoes with beans and salsa and stuff. So we'll have that tonight.

-- Cindy (SE In) (atilrthehony_1@yahoo.com), March 09, 2001.

Well, to tell you the truth I don't really care what we have tonight! I have a terrible cold and bronchitis and I can't smell or taste a thing. When I cough,my husband says I sound like an old Buick trying to start. We'll eat whatever he finds in the refrigerator. God bless!!
