how does yeast make bread palatable?

Yeast is a leavener, which does make bread palatable indirectly by leavening the product. Try eating bread that is not leavened sometime, it is certainly a stark contrast!

Irish Traditional breads 'soda breads' use bicarbonate of soda as the leavening agent, the soda flavour is one of the main characteristics of this cultural bread. Irish people would therefore disagree that yeast is required to make bread palatible.
