Bread turns brown in the toaster because it is burning. When something burns, it is reacting with oxygen. This is also called combustion. In complete combustion, the only product is Carbon Dioxide. However, in the case of toast, the combustion is incomplete, making carbon dioxide, water, and carbon. The water turns into steam and the bread turns brown due to carbon residue. Hope this helps.
